Sous vide is French for "under vacuum," and the name describes the technique precisely: food is sealed in a bag, submerged in a temperature-controlled water bath, and cooked at an exact temperature for a specific duration. The method was developed in 1974 by French chef Georges Pralus, who used it to improve the preparation of foie gras. For decades it stayed in restaurant kitchens because the equipment cost thousands of dollars. Today, a capable immersion circulator costs under $100, and the technique has become accessible to anyone with a pot and a countertop.
The fundamental advantage of sous vide is precision. A conventional oven set to 350 degrees Fahrenheit creates an environment that is 350 degrees around the food, but the food itself passes through every temperature on its way to your target doneness. A steak on a grill reaches medium-rare at 130 degrees internally, but the outer layers overshoot to 160 or 170 degrees, creating a gray band of overcooked meat around the pink center. With sous vide, the water bath is set to exactly 130 degrees, and the entire steak reaches exactly 130 degrees edge to edge. There is no gray band. There is no overcooking. The physics are simple: food cannot exceed the temperature of the water surrounding it.
The equipment you actually need
The sous vide setup has three components: an immersion circulator, a container, and bags. The immersion circulator is the device that heats the water and keeps it moving. It clamps to the side of any pot or container and maintains temperature within fractions of a degree. We have tested circulators from Anova, Breville, and several budget brands. The meaningful differences between a $70 circulator and a $200 circulator are build quality and Wi-Fi connectivity, not cooking performance. Every circulator we tested held temperature within plus or minus 0.1 degrees Fahrenheit, which is more precision than any recipe requires.
For the container, any pot large enough to submerge your food works. A standard 12-quart stockpot handles most home cooking tasks. For larger items like a whole pork shoulder or multiple portions of chicken, a 12-quart Cambro polycarbonate container is the standard choice in both professional and home kitchens. It costs about $15, insulates slightly better than metal, and the flat sides make it easier to organize multiple bags in the bath.
For bags, you have two options. Vacuum-sealed bags, which require a vacuum sealer ($40 to $80 for a reliable home model), remove all the air from around the food and create a tight seal. Zip-top freezer bags, used with the water displacement method, work nearly as well for most applications. The water displacement method is simple: place the food in a zip-top bag, slowly lower it into the water bath, and the water pressure pushes the air out of the bag. Seal the zip-top just above the waterline. This method gets roughly 90 percent of the air out, which is sufficient for proteins, vegetables, and most other foods.
Temperature and time: the two variables that define sous vide
Traditional cooking is primarily about temperature: you set the oven to a number and cook until the food reaches a target internal temperature. Sous vide separates the two variables of temperature and time, and both matter independently.
Temperature determines doneness. A chicken breast cooked at 140 degrees Fahrenheit will be juicy and slightly pink. The same breast at 150 degrees will be white throughout but still moist. At 165 degrees (the FDA recommendation for poultry), it will be safe but noticeably drier. Sous vide lets you choose your exact doneness and reproduce it every time.
Time determines texture. A pork chop at 140 degrees for one hour will be firm and juicy. The same pork chop at 140 degrees for four hours will be noticeably more tender because the extended time breaks down connective tissue. At 12 hours, it becomes almost spreadable. This is the dimension of cooking that only sous vide unlocks: you can make a tough cut tender without raising the temperature past medium-rare.
Essential temperature reference for proteins
These temperatures represent starting points based on our testing. Personal preference varies, and the beauty of sous vide is that you can adjust by a degree or two until you find your ideal doneness.

The sear: why sous vide food needs finishing
Food cooked sous vide emerges from the bag pale and unappetizing. It is perfectly cooked on the inside, but it lacks the browned crust that provides flavor, texture, and visual appeal. The Maillard reaction, which creates the complex flavors of a seared steak or a roasted chicken, requires temperatures above 300 degrees Fahrenheit. A 130-degree water bath cannot produce it.
The solution is a quick sear after the sous vide cook. For steaks and chops, the method is straightforward: remove the protein from the bag, pat it thoroughly dry with paper towels (moisture is the enemy of browning), and sear it in a screaming-hot cast iron skillet with a high-smoke-point oil like avocado oil. Sixty to ninety seconds per side is typically sufficient. The goal is to brown the surface without overcooking the interior, so maximum heat and minimum time are your allies.
Drying the surface is the single most important step. Water on the surface of the meat must evaporate before the Maillard reaction can begin, and evaporating that water cools the pan, extending the sear time and overcooking the outer layers. We tested searing steaks with varying levels of surface moisture: a thoroughly dried steak achieved a deep brown crust in 60 seconds, while a damp steak took over two minutes to reach the same color, and the first quarter inch of meat was overcooked from gray to medium.
For foods that do not benefit from a hard sear, like chicken breast or fish, you can use a kitchen torch for targeted browning, or broil in the oven for two to three minutes. Sous vide vegetables typically need no finishing at all, as they are served as-is.
Foods that sous vide transforms
Some foods benefit enormously from sous vide; others see minimal improvement. Here is where the technique earns its keep.
Thick steaks. A two-inch ribeye cooked sous vide and seared is uniformly medium-rare from edge to edge. The same steak grilled conventionally will have a well-done exterior fading to medium, then medium-rare only at the center. The difference is dramatic and immediately obvious when you cut into the meat.
Chicken breast. Conventional chicken breast is almost always overcooked because cooks fear undercooking poultry. Sous vide eliminates the guesswork: 145 degrees for 90 minutes produces chicken that is juicy, tender, and pasteurized (safe). The texture difference between a sous vide chicken breast and a pan-seared one is the most dramatic single improvement sous vide offers in the kitchen.
Tough cuts. Chuck roast, short ribs, pork shoulder, and other collagen-heavy cuts become transcendent at low temperatures and long times. A 36-hour chuck roast at 135 degrees has the tenderness of a traditional braise but the pink, juicy texture of a medium-rare steak. Traditional braising cannot achieve this because the high temperatures required to break down collagen also push the meat well past medium.
Eggs. Sous vide eggs cooked at precise temperatures produce textures that are impossible to achieve any other way. A 145-degree egg has a custard-like white and a warm, runny yolk. A 150-degree egg has a set but jammy yolk. The difference between 145 and 150 degrees is subtle but distinct, and only sous vide can target it reliably.
Vegetables. Carrots cooked sous vide at 183 degrees for one hour are tender but retain their shape, color, and sweetness far better than boiled or steamed carrots. The sealed bag prevents water-soluble vitamins and flavor compounds from leaching out. Beets, sweet potatoes, and asparagus also benefit significantly.
Common mistakes and how to avoid them
Overcrowding the water bath. Bags need water circulation around all surfaces to cook evenly. If bags overlap or press against each other, you create cold spots where the food cooks more slowly. Leave at least half an inch between bags, and use clips or a rack to keep them separated. For large cooks, use a bigger container rather than cramming more bags into a small pot.
Not accounting for thickness. Sous vide cooking time is determined by the thickness of the food, not the weight. A one-inch steak reaches equilibrium temperature in about 45 minutes regardless of whether it weighs six ounces or twelve ounces. A two-inch steak needs about two hours. This is because heat travels through the food from the outside in, and the distance from surface to center is what matters.
Using the wrong bags. Regular sandwich bags are too thin for sous vide and can fail at temperatures above 150 degrees. Use freezer-grade zip-top bags (they are thicker and rated for higher temperatures) or vacuum sealer bags. Never use grocery store produce bags or bags that are not food-safe at cooking temperatures.
Skipping the ice bath for advance prep. One of the great advantages of sous vide is cooking ahead of time. You can cook proteins, chill them rapidly in an ice bath, and refrigerate them for up to five days. When ready to serve, reheat in the water bath at the original temperature for 30 to 45 minutes, then sear. But the ice bath step is critical: food must drop from cooking temperature through the danger zone (130 to 40 degrees) within two hours to prevent bacterial growth. A bowl of ice water brings a sealed bag from 140 degrees to below 40 degrees in about 15 minutes.
Cooking fish too long. Fish proteins are delicate and overcook quickly even at low temperatures. Salmon at 125 degrees for 45 minutes is silky and perfect. The same salmon at 125 degrees for two hours becomes mushy as the proteins break down excessively. Fish is one of the few sous vide applications where more time makes the result worse, not better.
Food safety at low temperatures
Sous vide often cooks food at temperatures below the FDA's recommended minimums, which raises legitimate food safety questions. The key concept is pasteurization through time. The FDA's 165-degree recommendation for poultry, for example, refers to instant pasteurization at that temperature. But pasteurization is a function of both temperature and time: chicken held at 145 degrees for 68 minutes achieves the same pathogen reduction as chicken held at 165 degrees for an instant. Both are equally safe.
The critical safety rule for sous vide is the four-hour limit at temperatures below 130 degrees. Below 130 degrees, most pathogens can grow. If food spends more than four cumulative hours between 40 and 130 degrees, it enters unsafe territory regardless of what happens afterward. For most home sous vide cooking (chicken at 145 degrees, steak at 130 degrees, pork at 140 degrees), the food reaches the pasteurizing zone quickly and stays there, so this is not a concern. It becomes relevant for very low-temperature eggs (below 130 degrees) or for large items that take a long time to come up to temperature from refrigerator temperatures.
When in doubt, use thinner cuts, start with food at room temperature (20 to 30 minutes out of the fridge), and set your circulator at or above 130 degrees. These practices keep you well within safe parameters while preserving the quality advantages of the technique.
Is sous vide worth the investment?
A basic sous vide setup costs $70 to $100 for the circulator plus bags you likely already own. It is one of the least expensive kitchen upgrades available, and it delivers the most dramatic improvement in protein cooking of any technique we have tested. If you regularly cook steak, chicken breast, or pork chops, the difference is obvious from the first cook. If you mostly cook pasta, stir-fries, or baked goods, sous vide will sit unused. The technique excels at a specific category of cooking, and the question is whether that category matches your cooking habits.
Our recommendation: buy a basic immersion circulator, cook three steaks and a batch of chicken breasts, and decide whether the results justify the counter space. For most cooks, the answer is emphatically yes.
