The Instant Pot is a pressure cooker, slow cooker, rice cooker, steamer, yogurt maker, and saute pan in a single appliance. It does most of those jobs well, one of them exceptionally, and that one exceptional function is the reason to own one: pressure cooking. Pressure cooking reduces cooking time by 60 to 70 percent for dishes that traditionally require hours of slow braising, simmering, or stewing. A pot roast that takes three hours in the oven reaches the same tenderness in 50 minutes. Dried beans go from hard to creamy in 35 minutes without soaking. Chicken stock that simmers for four hours on the stove is done in 45 minutes.
If you have just unboxed an Instant Pot and it is sitting on your counter looking slightly intimidating, this guide will walk you through how pressure cooking works, which buttons actually matter, the safety features that make modern pressure cookers nothing like the exploding stovetop models your grandmother warned you about, and five foundational recipes that will build your confidence.
How pressure cooking works
Water boils at 212 degrees Fahrenheit at sea level. Once boiling, no matter how high you turn the burner, the water temperature stays at 212 degrees. Energy goes into converting liquid water to steam rather than raising the temperature. This means traditional stovetop cooking has a ceiling: you cannot cook food in liquid hotter than 212 degrees at atmospheric pressure.
A pressure cooker changes this by sealing the pot and trapping steam. As water heats up inside the sealed chamber, steam builds up and increases the pressure. At the Instant Pot's high-pressure setting (about 11.6 PSI above atmospheric pressure), the boiling point of water rises to approximately 244 degrees Fahrenheit. This 32-degree increase has a dramatic effect on cooking speed because the rate of chemical reactions in food roughly doubles for every 18-degree increase in temperature.
The higher temperature breaks down collagen in meat faster, softens the cell walls of beans and legumes faster, and gelatinizes starches faster. It does not change the physics of cooking; it simply runs the same reactions at a higher temperature and therefore at a faster rate. The food that comes out of a pressure cooker is not different in kind from food cooked traditionally. It is the same result achieved in less time.
The buttons that actually matter
Most Instant Pot models have 10 to 15 buttons on the front panel. This creates the impression of complexity where very little exists. In practice, you need three buttons.
Saute. This turns the Instant Pot into an open pan for browning meat, sauteing onions, and building flavor bases before pressure cooking. It heats the bottom of the inner pot without the lid, just like a pan on the stove. You will use this before almost every recipe.
Pressure Cook (or Manual). This is the core function. Press it, set the time with the plus and minus buttons, and let the pot do its work. The Instant Pot will heat up, build pressure, cook for the set time, and then beep when cooking is complete. The time you set is cooking time only; it does not include the 10 to 15 minutes the pot needs to come to pressure before the countdown starts.
Keep Warm / Cancel. Cancel stops any active program. Keep Warm holds food at a safe serving temperature after cooking is complete. The pot defaults to Keep Warm mode after every cooking cycle.
The other buttons (Soup, Meat/Stew, Bean/Chili, Rice, Porridge, Steam, Yogurt) are presets that simply choose a pressure level and time for you. They do nothing that the Pressure Cook button cannot do with manual time entry. Once you understand how to set time and pressure manually, the preset buttons become redundant.
Safety features in modern electric pressure cookers
Stovetop pressure cookers of decades past had a single pressure regulator and relied on the user to monitor heat and pressure. If the regulator failed, the pot could reach dangerous pressures. Modern electric pressure cookers like the Instant Pot have multiple redundant safety mechanisms that make this scenario essentially impossible.
The Instant Pot uses a pressure sensor that continuously monitors internal pressure and adjusts the heating element to maintain the target pressure. If pressure exceeds the target, the element shuts off. A backup pressure relief valve opens automatically if pressure reaches 15.23 PSI, well below any dangerous threshold. A locking lid mechanism prevents the lid from being opened while the pot is pressurized. An anti-block shield on the underside of the lid prevents food particles from clogging the steam release valve. A temperature fuse cuts power if the pot detects a temperature anomaly.
In the Instant Pot's two-decade commercial history across millions of units, the failure rate for pressure-related safety incidents is negligibly small. The primary safety concern with an Instant Pot is the same as any pot of hot liquid: burns from steam during quick release and spills when handling the hot inner pot. Use the steam release valve carefully, do not put your hand or face above it during venting, and use oven mitts when removing the inner pot.
Five foundational recipes
Recipe one: perfect rice. Rinse one cup of long-grain white rice under cold water until the water runs clear. Add the rice to the inner pot with one cup of water and a half teaspoon of salt. Close the lid, set the valve to sealing, and pressure cook on high for three minutes. Natural release for 10 minutes, then quick release any remaining pressure. The rice will be perfectly cooked, with distinct, fluffy grains. This works every single time, which is more than most people can say about their stovetop rice method.
Recipe two: chicken broth. Place a leftover chicken carcass (or two pounds of chicken wings) in the inner pot with one quartered onion, two carrots broken into pieces, two celery stalks, a bay leaf, and a teaspoon of whole peppercorns. Add water to the max fill line. Pressure cook on high for 45 minutes. Natural release for 20 minutes. Strain through a fine-mesh sieve. You will have rich, deeply flavored broth that would take four to six hours of simmering on the stovetop. This broth freezes well in quart containers for up to six months.
Recipe three: dried beans without soaking. Rinse one pound of dried pinto beans. Add them to the inner pot with six cups of water, one teaspoon of salt, two cloves of garlic, and a bay leaf. Pressure cook on high for 35 minutes. Natural release completely, which takes about 20 minutes. The beans will be perfectly tender and creamy. No overnight soaking. Add two tablespoons of tomato paste, a sprig of thyme, and a bay leaf. Return the roast to the pot. Add carrots and potatoes around the edges. Close the lid, pressure cook on high for 60 minutes. Natural release for 15 minutes. The roast will be fork-tender with a rich, deeply flavored sauce. This is the dish that converts pressure-cooking skeptics.
Recipe five: steel-cut oatmeal. Combine one cup of steel-cut oats with three cups of water and a pinch of salt in the inner pot. Pressure cook on high for four minutes. Natural release for 10 minutes. The oatmeal will be perfectly creamy with distinct grain texture, the consistency that takes 30 minutes of stirring on the stovetop. Add butter, maple syrup, or fruit after cooking.
Understanding pressure cooking fundamentals
How pressure cooking works: A pressure cooker is a sealed pot that traps steam. As water boils inside the sealed pot, the trapped steam increases the internal pressure above atmospheric pressure. At approximately 15 PSI above atmospheric pressure (the standard "high pressure" setting on most electric pressure cookers), the boiling point of water rises from 212°F to approximately 250°F. This higher temperature accelerates chemical reactions — including the breakdown of collagen in connective tissue, the Maillard reaction in searing, and the softening of cellulose in vegetables — by a factor of 2 to 4 compared to conventional cooking at 212°F. A beef stew that takes 3 hours in a dutch oven takes 35 to 45 minutes under pressure because the collagen-to-gelatin conversion (the process that makes tough meat tender) occurs dramatically faster at 250°F than at 212°F.
When pressure cooking excels: Tough, collagen-rich cuts of meat (chuck roast, short ribs, pork shoulder, lamb shanks) that require hours of slow braising in conventional cooking. Dried beans (no-soak chickpeas in 35 to 40 minutes, black beans in 25 to 30 minutes — versus 1 to 3 hours of conventional simmering after overnight soaking). Stocks and broths (rich, gelatinous stock from raw bones in 60 to 90 minutes versus 6 to 12 hours of conventional simmering). Hard root vegetables (beets in 20 minutes, potatoes in 8 to 12 minutes, whole butternut squash in 12 to 15 minutes).
When pressure cooking does not help: Foods that cook quickly at atmospheric pressure (fish, shrimp, tender vegetables, eggs beyond hard-boiled, pasta) gain no time advantage from pressure and risk overcooking in the time it takes the pot to reach and release pressure. The total cycle time of pressure cooking includes 5 to 15 minutes for the pot to reach pressure, the cooking time, and 5 to 20 minutes for pressure release — for a food that cooks in 3 to 5 minutes conventionally, the overhead of pressurization and depressurization eliminates any time savings. Foods that require dry heat (searing, roasting, crisping) cannot be pressure-cooked because the steam environment prevents the Maillard reaction and any browning or crisping. The Instant Pot's sauté function allows browning before pressure cooking, but the pressure cooking phase itself cannot produce crispness — the "pot-in-pot" air frying lid accessories address this limitation for some Instant Pot models.
Common mistakes to avoid
Not enough liquid. The Instant Pot requires at least one cup of thin liquid (water, broth, wine) to generate the steam needed for pressurization. Thick sauces like tomato sauce or barbecue sauce do not count because they do not produce steam efficiently. Always add a cup of thin liquid to the bottom of the pot, even if your recipe calls for a thick sauce. Layer the thick sauce on top of the thin liquid.
Overfilling. The inner pot has a max fill line. Do not exceed it. For foods that expand during cooking (beans, grains, pasta), do not fill beyond the half-full line. Overfilling can clog the steam valve and prevent the pot from pressurizing properly.
Expecting the wrong things. Pressure cooking does not produce crispy textures. It is a moist-heat method. If you want a crispy exterior on your pot roast, sear it first using the saute function. The pressure cooking step produces tenderness; the saute step produces browning. They are separate goals that require separate techniques.
Forgetting the sealing valve. The single most common Instant Pot mistake is starting a pressure-cook cycle with the steam valve in the venting position instead of the sealing position. The pot will heat up, produce steam, vent it all out the top, never reach pressure, and eventually display a burn error. Check the valve before every cook. It should point to sealing.
The Instant Pot is a kitchen tool that does one thing spectacularly: it reduces slow-cooking time by two-thirds. If you cook beans, braise meat, make stock, or prepare grains regularly, it will save you hours every week.
