Cast iron skillets are supposed to last forever. That is the pitch — buy once, maintain properly, and hand it down to your grandchildren. But what does "maintain properly" actually mean in practice, and does every cast iron skillet reward that maintenance equally? We bought six popular cast iron skillets in August 2025 and put them into daily rotation in our test kitchen. For 12 months, they were used for everything from searing steaks to baking cornbread, maintained using identical cleaning and seasoning protocols, and evaluated quarterly for non-stick performance, heat distribution, and physical condition.

How we tested

All six skillets were maintained identically: rinsed with hot water immediately after cooking, scrubbed with a chain mail scrubber if necessary, dried on the burner for 60 seconds, and given a thin wipe of flaxseed oil while still warm. Complete re-seasoning (three cycles of oven seasoning at 500°F) was performed once, at the six-month mark, for all six skillets simultaneously.
Month 3: First divergence
All six skillets arrived with factory seasoning of varying quality. The Lodge and Victoria came with Lodge's standard rough-textured seasoning — functional but not smooth. The Blacklock had a thinner factory seasoning on a smoother surface. The three premium skillets (Butter Pat, Smithey, Finex) arrived with superior factory seasoning that was noticeably smoother and darker.
By month 3, the egg test revealed the first performance differences. The Butter Pat scored 4.5 — eggs slid with minimal coaxing. The Smithey scored 4.0. The Lodge scored 3.0 — eggs released but left some residue. The Victoria scored 2.5 — consistent sticking that required butter and technique to manage.
The key factor was surface smoothness. Premium cast iron skillets are machined or polished after casting, creating a surface similar to vintage pre-1960 cast iron. The Lodge and Victoria, which are sand-cast and sold with their rough casting texture, develop non-stick properties more slowly because the textured surface takes longer to fill in with polymerized oil.
Heat distribution at month 3: the Finex, with its octagonal design and thicker walls, showed the most even heating — a temperature range of only 18°F across the cooking surface at 400°F. The standard Lodge showed 34°F variation, consistent with its thinner walls and lighter weight. The Smithey and Butter Pat fell between at 22°F and 24°F respectively.
Month 6: The re-seasoning reset
At six months, we stripped all six skillets to bare iron using oven cleaner and rebuilt the seasoning from scratch using three identical oven seasoning cycles. This served two purposes: it reset the playing field to evaluate how each skillet builds seasoning on its naked surface, and it simulated what happens when a user strips and re-seasons a pan due to uneven seasoning buildup.
The machined-surface skillets (Butter Pat, Smithey) re-seasoned fastest and most evenly. After three oven cycles, both showed uniform, dark seasoning across the entire cooking surface. The Finex was an interesting case. Its spiral grooves — a design feature intended to reduce sticking — created seasoning challenges. Oil pooled in the grooves and built up unevenly, creating thick ridges of seasoning along the groove pattern. The grooves also trapped small food particles that required more aggressive cleaning. By month 6, we found the grooves to be a net negative: they added cleaning difficulty without improving non-stick performance compared to the flat-machined surfaces.
Month 9: The performance gap stabilizes
By month 9, the egg test scores had largely stabilized. Butter Pat: 4.8. Smithey: 4.5. Blacklock: 4.0. Lodge: 3.8. Victoria: 3.2. Finex: 3.5. The premium machined surfaces had matured into genuinely excellent non-stick performers — the Butter Pat released eggs almost as cleanly as a well-maintained non-stick pan. The Lodge and Victoria had improved significantly from their month-3 scores but still required more butter and more careful technique.
An unexpected finding: the Lodge Blacklock performed well above its $40 price point. Its machined surface (a departure from Lodge's standard rough casting) built seasoning nearly as well as the $160–$195 premium options. At month 9, its egg score was within 0.5 points of the Smithey at one-quarter the price. If Lodge's regular line adopted the Blacklock's machined surface, the premium cast iron market would have a serious problem.
Month 12: Final results and the verdict
After 12 months and approximately 1,300 cooking sessions per skillet, here are the final scores:

The Butter Pat Joan was the best performer overall — its polished surface developed the most reliable non-stick properties and required the least maintenance effort. But at $195, it represents a significant investment in a kitchen tool that a $19 Lodge will also serve competently with more patience during the seasoning development period.
The Lodge Blacklock is the clear value winner. At $40, it offers machined-surface performance that approaches the premium tier. If budget is any consideration at all — and it is for most people — this is the cast iron skillet to buy.
The Finex was the biggest disappointment relative to price. Its spiral grooves added maintenance burden without delivering non-stick superiority over flat surfaces, and at $195, it costs the same as the Butter Pat while performing measurably worse in the egg test. The heat distribution was best-in-test, which matters for applications like pan-searing where even browning is critical, but for general daily cooking, the grooves create more problems than they solve.
Month-by-month seasoning evolution
Months 1-3 (building the foundation): New cast iron with factory pre-seasoning (Lodge, Victoria, Camp Chef) has a thin, rough seasoning layer that provides basic non-stick performance but is far from the smooth, glass-like surface of well-used vintage cast iron. During the first three months of regular use, the seasoning builds gradually — each cooking session adds a microscopic layer of polymerized oil. High-fat cooking (bacon, sautéed vegetables in butter, fried chicken) accelerates seasoning development because the oil residue polymerizes onto the surface during cooking. Lean cooking (dry-toasting bread, cooking skinless chicken breasts) contributes less to seasoning development because less oil contacts the cooking surface.
The sticky phase (common in months 1-2): Many new cast iron users experience a period where the pan feels sticky after cooking — food residue adheres and requires scrubbing to remove. This stickiness occurs when too much oil is applied during seasoning or when the pan is not heated sufficiently during use. The fix: use less oil (a barely visible film, wiped with a paper towel until the surface appears dry), and preheat the pan for a full 5 minutes before adding food. The stickiness resolves as the seasoning layer matures and the excess oil polymerizes into the surface.
Months 4-8 (functional non-stick): By month four of regular use (cooking 3 to 5 times per week), the seasoning reaches functional non-stick status. Eggs slide with moderate butter. Pancakes flip without sticking. Meat releases when seared properly (placed on a hot, preheated surface and left undisturbed until the Maillard crust forms and naturally releases from the surface). The surface is noticeably smoother to the touch than the factory condition — the raised peaks of the rough casting have been worn down by use and filled in by polymerized oil.
Months 9-12 and beyond (matured seasoning): After a year of consistent use, the seasoning is a thick, smooth, dark polymer layer that performs comparably to modern non-stick coatings for most cooking tasks. Fried eggs slide freely with minimal fat. The pan requires less preheating time because the seasoned surface transfers heat more efficiently than bare iron. The surface has a subtle sheen that indicates multiple accumulated layers of polymerized oil. This is the cast iron performance that inspires the devotion of cast iron enthusiasts — and the performance that takes patience to develop, which is why many new users abandon cast iron during the frustrating early months before the seasoning matures.
Will the $19 Lodge work fine? Yes.
The standard Lodge deserves a candid acknowledgment. At $19, it is the most affordable way to own an heirloom-quality cooking vessel. Its rough surface develops adequate non-stick properties within 6–9 months of regular use — not as good as machined surfaces, but good enough for everything except eggs cooked without sufficient fat. It survived 12 months of daily abuse without warping, cracking, or developing permanent maintenance issues. The heat distribution is acceptable for home cooking where you are moving food around the pan rather than expecting a restaurant-quality sear across the entire surface.

One year of daily testing changed my own cooking habits permanently.
